Spring Chicken and Kohlrabi Stew recipe

Ingredients:

3 tablespoons unsalted butter
1 cup sliced yellow onions
2 leeks, washed and cut into 1-inch pieces
1 pound boneless chicken breasts, chopped
1 pound fresh kohlrabi, cut into 1-inch pieces
½ pound carrots, cut into 1-inch pieces
1 cup chopped tomatoes
½ teaspoon salt
1/2 teaspoon freshly ground pepper
4 cups chicken broth
½ cup chopped parsley

Preparation Instructions:

1. Heat butter in a large stockpot over medium. Add onions and leeks; cook for 5 minutes, until softened. Add chicken and cook until lightly browned, 3 to 4 minutes.

2. Add kohlrabi, carrots, tomatoes, salt, pepper, and broth; bring to a boil over high, reduce to a simmer, and cook 30 minutes, covered.

3. Adjust seasonings, stir in parsley, and serve.
