Honey-Glazed Melon Chicken recipeIngredients:¾ lb of skinless, boneless chicken, thinly sliced.
1 tablespoon of dry sherry.
1 teaspoon of cornstarch.
¼ teaspoon of salt.
1 tablespoon of cooking oil.
1 teaspoon of minced ginger.
1 cup of cantaloupe and honeydew melon balls.
1 tablespoon of honey.
2 teaspoons of lemon juice.
Dash of sesame oil. Preparation Instructions:In a suitably sized bowl, combine the chicken, sherry, cornstarch and salt. Stir to coat, then set aside for 30 minutes.
Heat a wok over high heat until hot.
Add the cooking oil, swirling to coat sides.
Add the chicken and minced ginger; then stir fry for 2 minutes or until chicken turns opaque.
Add the melon balls, honey and lemon juice, cook until heated through.
Stir in the sesame oil.
